Cathay Pacific Elevates Culinary Experience with Duddell’s Partnership Expansion

Cathay Pacific is thrilled to announce the enhancement of its partnership with the prestigious Michelin-starred restaurant, Duddell’s. The airline is set to delight customers with a fresh array of “Hong Kong Flavours” as part of its extended collaboration with the renowned Hong Kong eatery.

Building on the success of their initial partnership launch in February 2023, Cathay Pacific continues its collaboration with Duddell’s to introduce an updated series of menus. These menus showcase authentic Cantonese and regional Chinese specialties alongside elegantly crafted classic comfort dishes, exclusively available to First and Business class passengers on selected long-haul flights departing from Hong Kong.

This culinary initiative is part of Cathay Pacific’s ongoing commitment to providing passengers with meticulously curated dining experiences during their air travel. The airline has been actively engaging in collaborations with esteemed local restaurants and brands to fulfill this commitment.

First Class travelers can embark on a gastronomic adventure beginning with a crystal pork terrine appetizer infused with black vinegar, inspired by a specialty dish from China’s Jiangsu province. The exquisite main courses offer choices such as sautéed abalone and chicken with Sichuan pepper and crispy greens, a modern take on a traditional Chiu Chow dish, and steamed cod fillets with Chinese ham and shiitake mushrooms, presenting a luxurious blend of textures and flavors. The culinary journey concludes with a delightful black sesame tart paired with tofu ice cream, drawing inspiration from the beloved Chinese sweet black sesame soup.

Business Class passengers are not left behind in this culinary journey, with highlights like Sichuan-style poached chicken with sesame and chili sauce as a starter, offering a delightful mix of spicy, fresh, fragrant, and tender flavors. The main dishes include the standout braised pork ribs with hawthorn sauce and green apples, featuring tender pork ribs coated in a sweet and tangy sauce made with fresh hawthorn berries and apple cider vinegar. Additionally, the hearty braised beef ribs with port wine, slow-cooked to perfection with port and tomato paste, provide a warm and satisfying option for the winter season. Completing the dining experience is a light and dreamy dessert — tofu pudding with red beans — offering silky smooth pudding with a rich aroma of soybeans and topped with sweet azuki red beans from Hokkaido.

Cathay Pacific’s collaboration with Duddell’s aims to elevate the overall in-flight dining experience, providing passengers with a taste of authentic Hong Kong flavors at 30,000 feet.
